Zucchini Bread


1 ½ C coconut or brown rice flour
1 ½ C Whole wheat flour
1 Tablespoon ground cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 egg whites
½ C sugar
1 C unsweetened applesauce
¼ C coconut oil or olive oil
1/3 C pureed prunes (baby food works well)
1 Tablespoon vanilla
2 C shredded zucchini (squeeze out excess liquid after shredding)


Pre-heat oven to 350 degrees In a small bowl mix together dry ingredients, flour through salt and set aside. In a larger bowl, with electric mixer eggs through vanilla at med to high speed. Reduce to  low speed and add in flour mixture. Stir in zucchini well. Divide among well greased loaf pans and bake for 60 – 70 minutes (test with toothpick in center until it comes out clean)
